Kitchen Sink Salad Mondays

In an effort to adopt some sort of routine, I may have to resort to planning meals around theme days to make life a little easier.  We have always enjoyed left overs on Sundays so that there is truly a day of rest, but the remainder of the week I try to create something fresh and appealing at mealtime. I have to admit, Monday lunches do not stir my creativity, as I’d rather grab-n-go to get a jump on the week. But alas, grab-n-go is not a healthy choice.

To make it easy, we’ll just follow Sunday left overs with Kitchen Sink Salad Mondays—throwing whatever we have on top of lettuce and enjoy!

Today’s hodgepodge was: Oh, so delicious!
spinach
butter lettuce
nacho chicken
smoky black beans
avocado
pecans
tomato
fresh herbs
carrots
blueberries
apples

Basic Dressing
2 tbsp. apple cider vinegar (Bragg)
2 tbsp. flax seed oil
2 tsp. Dijon mustard
1 tbsp. honey
1/3 cup extra virgin olive oil
salt
pepper (lemon pepper works well too)

Add ins: any combination
2 tbsp fresh minced parsley or other fresh herbs
2 tbsp kefir for creamy dressing
1/4 cup orange juice
1 tbsp lime juice

  1. I feel so much better to see that other people as well mix together avocado, apples, pecans and spinach!!! Yes, it’s yummy!
